How to maintain the weight through a balanced diet with little fat or not?

I'm 6'3, 196 pounds, and cut below 250 pounds, Since January this year. I got to eat healthier, cut fast food from my diet, eating foods rich in fiber and virtually eliminate saturated fats and monkey. When you eat fat, it is offset by almost three times the amount of protein (ie, 3g fat, 9 g protein) and food takes longer to digest. The main reason for my healthy lifestyle is to help provide a better CONROL my type I diabetes The problem I'm faithful to my calorie intake is probably around 2000-2500 per day. I eat every 2 hours a total of 6 or more times per day with a strict diet of fruit and vegetables, whole grains. My approach is that I have to stop losing weight and keeping level near 200 pounds. I wonder what other recommendations you have for dieting and calories for me around 3000 per day without increasing my intake of Fat raw materials? Recipes, foods suggestions, WBSITES, or general information are all welcome and appreciated.
